Ingredients:
- 2 cups all-purpose flour

- 2 eggs

- 1 cup fresh raspberries
- Zest of 1 lemon
- 1/2 cup lemon curd
- 4 egg whites
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
Instructions:
In a large bowl, combine flour, sugar, baking powder, and salt
In another bowl, beat the eggs, then stir in milk and vegetable oil
Pour the wet ingredients into the dry ingredients and mix until just combined
Gently fold in the fresh raspberries and lemon zest
Preheat your waffle iron and grease it lightly
Pour waffle batter onto the hot waffle iron and cook according to manufacturer's instructions until golden brown and crisp
While waffles are cooking, warm the lemon curd in the microwave for 30 seconds
For the meringue, beat egg whites until soft peaks form, then gradually add sugar and vanilla extract, beating until stiff peaks form
Serve waffles topped with a drizzle of warm lemon curd and a generous dollop of meringue
Use a kitchen torch to lightly brown the meringue, if desired
