Ingredients:
- 2 large sweet potatoes, peeled and diced
- 1 cup unsalted peanuts
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red chili, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper
- 4 cups vegetable broth
- 1 can 14 oz coconut milk
- Salt and pepper to taste
- 2 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions:
In a large pot, heat vegetable oil over medium heat
Add chopped onion, garlic, and red chili
Saut until onion is translucent
Stir in ground cumin, ground coriander, and cayenne pepper
Cook for 1-2 minutes until fragrant
Add diced sweet potatoes, peanuts, vegetable broth, and coconut milk to the pot
Bring to a boil
