Ingredients:
- 1 cup basmati rice
- 1 1/2 cups chicken broth
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, halved
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup crumbled feta cheese
- Fresh parsley for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Warm up the olive oil in a big pan over medium-low heat
Add the garlic and onions and cook until they get soft
Put in the chicken pieces and cook them until all sides are browned
Add the zucchini, olives, cherry tomatoes, and bell pepper and mix them in
Bring it to a boil
Add salt, pepper, oregano, and thyme to taste
Cover the bottom of a 9x13-inch baking dish with rice
Add chicken broth to the rice
Put the chicken and vegetable mix on top of the rice
Place the dish in the oven and cover it with foil
Bake for 25 to 30 minutes, or until the rice is done and the chicken is soft
When you take it out of the oven, add the feta cheese and parsley and then serve
