Ingredients:
- 4 large potatoes, thinly sliced
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 pound sausage, casing removed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions:
Get the oven ready by heating it up to 400F 200C
Add the potato slices to a large bowl and season with salt and pepper
Place potato slices on a baking sheet in a circle, slightly overlapping them to make a crust
Bake the potatoes for 20 minutes, or until they are just barely soft
In the meantime, brown the sausage in a skillet over medium-low heat, then break it up into small pieces
Put in the minced garlic and diced onion
Cook until the onion gets soft
Take the potato crust out of the oven
Cover the crust with the sausage mixture
Put some mozzarella and Parmesan cheese on top
For another 15 to 20 minutes, bake until the cheese melts and starts to bubble
Add chopped parsley as a garnish before serving
