Quinoa Salad with Black Beans, Avocado and Cumin-Lime Dressing



A healthy and refreshing quinoa salad with avocado, black beans, and a spicy cumin-lime dressing. Perfect for a meal that is both light and tasty.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 can 15 oz black beans, drained and rinsed
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions:

In a medium saucepan, combine quinoa and water

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

Fluff with a fork and let it cool

In a large bowl, mix cooked quinoa, black beans, avocado, red onion, and cilantro

In a small bowl, whisk together olive oil, lime juice, ground cumin, salt, and pepper to create the dressing

Pour the dressing over the quinoa mixture and toss gently to coat evenly

Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld

Serve chilled and enjoy!
