Sweet Potato Burger



A delicious and nutritious vegetarian burger made with sweet potatoes, quinoa, and flavorful spices. Perfect for a meatless meal that satisfies both taste and hunger.

Ingredients:

  • 2 medium sweet potatoes, peeled and grated
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

  • Tomato slices
  • Avocado slices

Instructions:

Warm the oven up to 190C 375F

Grate the sweet potatoes and mix them with the cooked quinoa, breadcrumbs, chopped onion, cilantro, cumin, salt, and pepper in a large bowl until everything is well mixed

Make patties out of the mixture that are the size you want

Put the patties on a baking sheet that has parchment paper on it

Place the burgers in an oven that has already been heated

Bake for 25 to 30 minutes, flipping them over halfway through, until the outside is golden and crispy

Toast the burger buns if you want to

Put lettuce leaves on the bottom bun of each burger, then the sweet potato patty, tomato slices, avocado slices, and your choice of toppings

Place the other half of the bun on top and serve right away

Gluten-Free Peanut Butter Quinoa Cookies



Delicious and nutritious gluten-free cookies made with quinoa, peanut butter, and a touch of sweetness. Perfect for a guilt-free treat!

Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional

Instructions:

Preheat oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, combine cooked quinoa, peanut butter, honey, egg, vanilla extract, baking soda, and salt

Mix well until all ingredients are fully combined

If desired, fold in chocolate chips into the cookie dough

Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart

Flatten each cookie slightly with a fork, creating a crisscross pattern on top

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
