Garden Veggie Pasta Salad



The fresh vegetables, whole wheat pasta, and tangy vinaigrette dressing in this Garden Veggie Pasta Salad go so well together. Ingredients:

  • 2 cups whole wheat pasta, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell peppers, red onion, basil leaves, olives, and feta cheese

In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper

Pour the dressing over the pasta salad and toss gently to coat evenly

Refrigerate for at least 30 minutes before serving to allow the flavors to meld together
