Blueberry Peach Crumble Cookies



The sweet and tangy flavors of blueberries and peaches are combined in these Blueberry Peach Crumble Cookies, which have a delightful crumble topping. They're soft and chewy, and they're ideal for any occasion.

Ingredients:

  • 1 cup fresh blueberries
  • 1 cup peeled and diced peaches
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup old-fashioned oats
  • 1/2 cup chopped pecans
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions:

Preheat your oven to 350F 175C

Line a baking sheet with parchment paper

In a medium bowl, gently combine the blueberries and diced peaches

Set aside

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the egg and vanilla extract to the butter mixture, and beat until well combined

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Fold in the oatmeal and chopped pecans

Take 1/3 of the cookie dough and place it in a separate bowl

To the separated dough, add the brown sugar and ground cinnamon, mixing until well combined

This will be the crumble topping

Using a cookie scoop or your hands, form cookie dough balls and place them on the prepared baking sheet

Take a small amount of the crumble topping and press it gently onto the top of each cookie dough ball

Bake the cookies in the preheated oven for 12-15 minutes, or until the edges are lightly golden

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
